Methi (Fenugreek) Naan– A Nutritious And Light Gluten Free Bread Using Organic Coconut Oil

Today we want to share with you a real treat from home, our Methi Thepla, using fresh methi (fenugreek), a beautifully fragrant herb known for its many health benefits!

Coconut Oil for Cooking

How are we going to use coconut oil in our cooking? For this recipe, it’ll be used for frying and in making the thepla dough. The wonderful thing about coconut oil is that it has a high smoke point, which means it can be taken to high temperatures (177°C) without burning and meaning it won’t change to chemically up to that point. When oils exceed their smoke point, they can become toxic to our bodies, thus, we don’t want to fry with oils that have a low smoke point because they produce harmful chemicals that do no good for our bodies (olive oil for instance has a low smoke point and is not great for cooking with).

Instead, we want an oil we can trust, an oil we use at high temperature and know it’ll be intact and good for our bodies! That’s why top chef Alan Coxon uses it in his cooking stating “The oil has great temperature thresholds and can be taken very high without effecting flavour and allowing for the sealing and searing of meats and poultry that are often required in my Asian dishes”. So, if that’s not a good enough reason to give our coconut oil a try, then what else is!

Methi(fenugreek) Naan Recipe

Serves 10

250g organic Millet flour

One bunch of fresh fenugreek leaves, roughly chopped (methi leaves)

1/4 tsp fresh red chillies, finely chopped

1 tsp fresh ginger

1 tsp coriander powder

1 tsp cumin powder

1 tsp sesame seeds

1/2 tsp turmeric powder

½ tsp ajwain

Pinch of salt

2tbsp organic king coconut oil, melted

2 tbsp organic king coconut oil – to use for frying

½ cup warm water or yogurt

Methi(fenugreek) Naan Recipe

  1. Combine the dry ingredients into a bowl – flour, turmeric, coriander, cumin, sesame seeds, ajwain and salt.
  2. Add the chilli, ginger, methi (fenugreek leaves) and melted coconut oil and mix into the dry mix to make a crumbly texture.
  3. Add a little of a warm water/yoghurt to bring together the dough and make a semi-soft and smooth dough, but not a sticky one.
  4. Cover and leave for 15 minutes. Then knead the dough one last time on a floured surface and then divide it into 12 small balls.
  5. Flatten the dough into round discs that are no thicker than 0.5cm
  6. Heat up a pan on a medium heat and add in Jeeva organic king coconut oil
  7. Once melted and hot, place the dough (naan) in the pan and fry for a minute and flip once golden brown. One cooked through and golden, remove from the heat and repeat the process for the rest of the naan(Thepla).
